Датское масляное печенье (Danish Butter Cookies)

Рецепт Pierre Herme

95 гр сливочного масла
1 гр соли (Fleur de Sel)
2-3 щепотки ванильного порошка (ванильный экстракт 1-2 капли)
40 гр сахарной пудры
15 гр яичного белка (белок от половины яйца)
115 гр пшеничной муки (или cake flour)

Разогреть духовку до 180C (355 F).
В пиале смешать размягченное сливочное масло и соль до кремообразного состояния.
Добавить сахар и еще раз перемешать до кремообразного состояния.
Добавить белок и ваниль. Перемешать.
Добавить муку и перемешиать до однородногсти.
Переложить тесто в пресс для печенья или в кулинарный мешок .Сформировать (выдавить) тесто на выстеленный пергаментом противень.
Выпекать печенье 10-13 минут до светло-желтого цвета.
Остудить печенье на решетке. Хранить в герметичном контейнере.

Из данного количества ингредиентов у меня получилось около 20-30 шт. небольших печенюшек.
Очень приятные на вкус, не слишком сладкие, рассыпчатые печенья .

Danish Butter Cookies

The best Danish butter cookies! These Danish cookies are buttery, rich in milky and creamy flavors. This easy Danish butter cookie recipe is fail-proof.

Ingredients

  • 125 g (4.4 oz.) unsalted butter, room temperature
  • 35 g (1.2 oz.) powdered sugar
  • 35 g (1.2 oz.) fine sugar
  • 1/4 teaspoon salt
  • 100 ml heavy whipping cream
  • 180 g (6.3 oz.) cake flour, sifted

Instructions

  1. Preheat oven to 180°C (356°F).
  2. In a bowl, mix together butter, powdered sugar, fine sugar and salt. Then, whisk until well combined and fluffy.
  3. Gradually add in the whipping cream in 3 portions, beating on low speed between each addition.
  4. Add the cake flour to the butter mixture. Mix well, pour into a piping bag with a star piping tip.
  5. Pipe out the batter on a lined baking sheet.
  6. Bake for 10-12 minutes or until the edges turn slightly brown. DO NOT OVERBAKE. Let cool and store in an airtight container for up to 5 days .

Homemade Danish butter cookies are the perfect cookie to share and give as edible gifts! Make your own tin of cookies with different unique piped designs.

Do you remember those shiny round blue tins filled with sweet buttery treats that always show up around the holidays? My grandparents used to always get them as gifts from their friends, and they would be sitting on their coffee table waiting for all of the grandchildren to devour.

My favorite was the pretzel-shaped cookies with the crunchy sugar on top. I couldn’t stop eating them! Now that I’m a BIG kid, I thought it was time to make these vanilla Danish butter cookies as a homemade treat for my friends and family. They make awesome edible gifts!

The cookie batter is a simple combination of fluffy butter, sugar, flour, vanilla bean, egg, and salt. It couldn’t get any simpler than that my friend.

I used a piping bag and 1/2-inch round and star tip (Ateco 806 for round and 824 for star tips) to create the fluted pretzel, wreaths, and circle-shaped cookies. You can also place the dough in a resealable plastic bag, cut off a 1/2-inch tip and create the wreath shaped cookies by making conjoined circles, shown below.

Aren’t these adorable cookies when filled in white paper cups and packed into festive tins? I found these Christmas decorated tins at the 99 cent store. They had a lot of sizes, shapes and color options for a great price.

These cookies are crisp with an aromatic vanilla flavor from real vanilla beans. If you don’t have access to vanilla beans, the paste alternative or extract can be used. If you use vanilla extract, you just won’t get the freckled appearance. I also sprinkled the tops of these cookies with sparkling coarse sugar, but you can also use granulated sugar.

Vanilla Danish butter cookies are perfect for dipping in tea or coffee, as they are very sturdy. If you’re like me and prefer to make personalized DIY gifts for the special people in your life, you can have fun creating your own cookie tin. Danish Cookies are well known all over the world, especially around Christmas where you will find them in your local supermarket, whether you are living in USA, Australia or Asia.

It is a big export in Denmark and there are a number of factories that specialise in Danish Cookies, like Kjeldsens Danish Butter cookies and Jacobsen’s Danish Butter cookies.
Their production lines spit out about 8000 cookies a minute when up and running and are packed in nicely decorated tins in a variety of sizes.

500 g Flour
200 g Sugar
750 g Soft Butter

Mix all ingredients together in an electric mixer, put mixture in a pipping bag and pipe out on baking Paper in circles at about 5 centimeters in diameter with a large star nozzle, keep in mind that the cookies will run out a little during baking.

Baking temperature 180-200В°C
Baking Time 7-10 min, depending on oven.

750 g Flour (Biscuit or cake flour)
225 g Icing Sugar
600 g Butter
Vanilla

Mix all ingredients together , do not over mix.
Divide into 3 pieces and roll out in a sausage shape to about 3.5 cm in thickness.
Wet the dough slightly and roll in coffee sugar,Refrigerate until hard

Cut out in pieces about 2 ВЅ -3 mm thick and tray up on baking paper.

Preheat oven to 180В°C
Baking Time about 6-8 min

Variations

Specier with choc chips.
Add some chocolate drops before rolling out.

Specier with pecan nuts.
Add some crushed Pecan nuts before rolling out.

Specier snails.
Divide the dough in two pieces and add cocoa to one piece.
Roll both pieces of dough out flat in a square, wet one piece slightly with water and place the other piece on top, again wet slightly with water and roll up tight like a Swiss roll.

Roll out in a sausage shape about 3 ВЅ cm thick and refrigerate, cut out 2 ВЅ — 3 mm thick.
